20 MINUTE ONE POT SHRIMP CHOW MEIN
1 pound raw shrimp, peeled, deveined and thawed
8 oz refrigerated Chow Mein noodles, or spaghetti or linguini
1 tbsp vegetable oil
1/2 tsp ginger, minced
1 tbsp garlic, minced
1 medium carrot, sliced
3 cups bok choy, shredded
Chow Mein Sauce
1/4 cup soy sauce
2 tbsp oyster sauce
1 tbsp Chinese cooking wine, or sherry
2 tbsp sugar
Thaw your shrimp if they are still frozen.
Prepare the noodles according to the package directions.
In a medium bowl, mix soy sauce, oyster sauce, sugar and cooking wine.
Meanwhile, place a large skillet over medium-high heat.
Add in vegetable oil followed by the minced garlic, ginger, carrots and bok choy. Stir fry for about 5 minutes until almost tender.
Add in the shrimp and stir fry another 2-3 minutes until they just turn pink.
Drain the noodles and add to the shrimp/vegetable mixture. Add the Chow Mein Sauce mixture.
Toss together to coat evenly. Serve and enjoy
