Pineapple & Carrot Salad
1 package lemon jello
1 cup pineapple juice
1 cup diced pineapple, drained
1 cup boiling water
1 tablespoon vinegar
1 cup carrot, shredded
Dissolve the jello in boiling water.
Add the pineapple juice & vinegar to the jello mixture. Chill.
When the jello is slightly thickened, add the pineapple pieces as well as the carrots.
Turn the jello into a mold. Chill until firm.
Un-mold the jello onto a serving plate.
Serves 8
