SALMON PATTIES
SALMON PATTIES
(1) 14 3/4 Oz Canned Salmon
2 Egg Whites slightly beaten
1/2 small Onion Chopped
Lemon Juice couple squirts
Old Bay Seasoning - couple dashes
Black Pepper - couple dashes
2 Tbsps. Seasoned Panko (I like it better than bread crumbs)
Prepare Salmon
Open can, drain Salmon and place on chopping board for easier prep. Using a knife scrap off skin and I also remove the dark part of the Salmon making certain only the meat of the fish is used and not the skin. Separate fish to clean the skin off from the center. Place the cleaned Salmon in a mixing bowl. Do not throw the bones out. They are a great source of calcium. Smash bones with a spoon and place in bowl.
Mix
Add egg whites, onions, lemon juice, and seasoning to the Salmon and mix. Mix in the panko.
In a medium size skillet spray pan with generously with cooking spray(I use Pam) and place pan over Med/High heat.
Make four even size Salmon Patties and placed in the preheated skillet. Cook for 3-4 minutes turn over and cook for an additional 4 minutes.
