Raisin-Nut Pumpkin Muffins
1 15- ounce can Libby’s 100% pure pumpkin
1 box vanilla cake mix
1 tablespoon chia seeds
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup raisins
1/4 cup walnuts
Preheat oven to 350 degrees. Line muffin pan with 12 liners.
In a large bowl mix pumpkin puree, cake mix, chia seeds, cinnamon, nutmeg, and cloves until well combined. Stir in raisins and walnuts.
Use a cookie scoop to evenly distribute batter into muffin pan.
Bake for 20-22 minutes.
