Slow Cooker Scalloped Potatoes
4 lbs russet potatoes peeled and sliced thin
24 oz Hickory Smoked Bacon diced
1 onion peeled and diced
8 oz cream cheese cubed
2 cups shredded cheddar cheese
2 10 3/4 oz cans cream of chicken soup
salt and pepper to taste
Layer half of the sliced potatoes, half of the diced bacon, and half of the diced onion in the bottom of a slow cooker.
Add layers of half of the cubed cream cheese and half of the shredded cheese.
Repeat layers with remaining half of ingredients.
Spread condensed cream of chicken soup over the top.
Cover and cook on low 8 - 10 hours, or on high 4 hours.
Remove lid and stir well to incorporate all ingredients.
Switch to "keep warm" mode and serve warm out of the slow cooker.
