Lemon Chicken and Broccoli Bake
4 boneless skinless chicken breasts
3 cups broccoli florets
2 tablespoons olive oil
3 tablespoons butter, melted
4 cloves garlic, crushed
1 lemon, zested and juiced
1 teaspoon lemon pepper
½ teaspoon salt
½ cup grated Parmesan cheese
Salt and Pepper, to taste
Preheat oven to 375 degrees. Spray a 9x13 pan with nonstick cooking spray.
Lay chicken breasts in the prepared pan and surround with broccoli florets.
In a small bowl, whisk together olive oil, melted butter, garlic, lemon juice, lemon pepper, and salt. Drizzle over chicken and broccoli.
Bake in the preheated oven until chicken reaches an internal temperature of 165 degrees F, about 35-40 minutes.
Remove from oven and sprinkle with lemon zest and parmesan cheese. Serve hot. Season with salt and pepper to taste.
