Jicama Fruit Salad
Jicama Fruit Salad
1 1/4 C. peeled and chopped/diced jicama
1 mango, chopped
8 large strawberries, chopped
1 apple, chopped (any kind you like)
1/4 C. seasoned rice wine vinegar
1 T. honey
1/2 tsp. lemon juice
pinch of salt
Combine the jicama and fruit in a bowl. Whisk together the vinegar, honey, lemon juice and salt.
Pour over the salad and toss to coat well. Cover and refrigerate for 1 hour before serving.
