Ooey, Gooey, Peanut Butter, Sugar cookies

Ooey, Gooey, Peanut Butter, Sugar cookies 1 cup and 3 tablespoons butter, softened 1-1/2 cups and 2 tablespoons white sugar 3 eggs 3/4 teaspoon vanilla extract 4 cups all-purpose flour 1-1/2 teaspoons baking powder 3/4 teaspoon salt 1 cup peanut butter ( you may need more or less according to your personal liking) In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight). Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on un greased cookie sheets. place a small dollop of peanut butter in the center of each cookie. Place another cookie on top of each one and press edges gently. Sprinkle with colored sugar. You could ice them if you prefer. Bake 6 to 8 minutes in preheated oven. Cool completely. You can make this with a Peanut Butter cookie recipe if you prefer. NOTE: Recipe directions will make 24 stuffed cookies
