Ambrosia Pie
1 premade graham cracker crust
2 (8 oz) cans crushed pineapple, undrained
1 (5.1 oz) package instant vanilla pudding mix
1 cup sour cream
Juice from 1 lemon
1 cup shredded sweetened coconut
1 cup mini marshmallows
1 cup canned mandarin oranges, drained
In a medium bowl, stir together pineapple, pudding mix, sour cream and lemon juice until well combined.
Add marshmallows and coconut and stir to combine. Gently fold in oranges.
Spoon into prepared crust, cover and chill at least 4 hours and up to overnight. Enjoy!
