INSTANT POT HONEY GARLIC CHICKEN 3-4 boneless, skinless chicken breasts, diced Salt and pepper to taste 1/2 cup honey 1/3 cup soy sauce 1/3 cup onion, diced 1/4 cup ketchup 2 tablespoons olive oil 1 TBS minced garlic 3 teaspoons cornstarch dissolved in 1/4 cup water Rice for serving **OPTIONAL - you could add veggies or water chestnuts or bean sprouts, etc. - I added 1 can of water chestnuts, 2 C of raw broccoli and 1/2 C of sliced mushrooms at the very end when adding the cornstarch Add olive oil, garlic and onion to Instant Pot. Push the Saute button and cook for a few minutes. Add chicken to the pot and in a small bowl, combine honey, soy sauce, onion, ketchup, oil, and garlic. Pour the mixture over chicken and put your Instant Pot Lid on and set to seal. Cook on the manual setting for 12 minutes and then quick release once the 12 minutes is up. Dissolve 3 teaspoons of cornstarch in 1/4 cup of water in a small bowl and pour into your Instant Pot. Stir to combine with sauce. Push the Saute button and cook sauce for about 5 minutes or until slightly thickened. (this is where I add the veggies or any extras). Serve over rice.
