Breakfast Medley
5 strips bacon, chopped
1/2 lb. smoked sausage, sliced or chopped (your preference)
2 large russet potatoes, washed and diced
1 small onion, chopped
1/2 green bell pepper, chopped
4 eggs, beaten
1 T. butter
1/4 tsp. salt
1/2 tsp. black pepper
1/4 C. shredded Colby jack cheese
In a skillet, fry the bacon and when the bacon is close to being done, add in the sausage and cook till it begins to brown. Remove the meats to a paper towel lined plate, save the grease. Add the potatoes to the pan (with 2 T. of the bacon grease) and cook over medium heat, stirring often till potatoes are tender and begin to brown up (about 10-12 minutes). Add in the onion and bell pepper. Cook for and additional 5-6 minutes. Remove the potatoes to a bowl and add the butter to the pan. When melted, add in the eggs and scramble them. Once the eggs are done add the meats and the potato mixture to the eggs and combine well. Season with the salt and pepper. When serving, top with a little of the cheese.
