Pumpkin Cookies
Pumpkin Cookies
1/2 cup margarine, softened
1 1/4 cup brown sugar, packed
2 eggs
1 tsp vanilla
1 cup canned pumpkin (not pie filling)
2 cups flour
4 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger
1 cup raisins or chocolate chips (optional)
Cream together margarine and sugar. Beat in eggs, one at a time. Add vanilla and pumpkin.
Stir remaining ingredients together in a separate bowl, then add to margarine mixture. Mix together well.
Drop by tablespoonfuls onto greased pans. Bake in 375 degree oven for about 15 minutes until lightly browned.
Makes about 5 1/2 dozen.
This recipe can be easily doubled. I don't know if it freezes well or not - they never make it to my freezer.
