Fritos Corn Salad
Fritos Corn Salad
3 can (15 oz) sweet yellow corn, drained well
5-6 green onions, finely chopped
1 orange bell pepper, chopped
1 yellow bell pepper, chopped
4 roma/plum tomatoes, seeded and chopped
1/2 cup chopped cilantro
1 1/2 cups shredded cheddar cheese
1 cup mayonnaise (full-fat is best)
juice of 1 lime
1/2 teaspoon chili powder
1/2 teaspoon cumin
1 bag (14.25 oz) Fritos Chili Cheese Corn chips
Combine corn, green onions, bell peppers, tomatoes, cilantro, and cheddar cheese in a mixing bowl.
In a separate small bowl, stir together the mayo, lime juice, chili powder, and cumin. Stir together with a fork and add into the larger mixing bowl of vegetables.
Stir everything together in the large mixing bowl.
Refrigerate for 2-4 hours and then add the chips OR add chips and serve right away.
NOTE: If you're worried about the spice/heat level, go ahead and use a bag of plain Fritos Corn chips. I have a pretty low tolerance for heat and spice, and this salad as written was perfect. Even my almost 2 year old ate the chips by themselves and loved them. It's up to you. If you add use the regular corn chips, I would increase the chili powder to 1 teaspoon.
