Quick Chocolate Brittle
1/2 c. raw peanuts
1/2 c. margarine
3/4 c. firmly-packed brown sugar
1 (6 oz.) pkg. semi-sweet chocolate morsels
Lightly grease a 9-inch pan. Sprinkle peanuts into pan and set aside. Combine brown sugar and margarine in medium saucepan. Cook over low heat, stirring constantly, until mixture reaches soft crack stage (about 270). Immediately pour over peanuts, spreading to sides of pan. Sprinkle chocolate morsels over top. Cover with foil and let stand 2 minutes. Remove foil, spread chocolate evenly over top and chill until firm. Remove candy from pan and break into pieces. Makes about 1 pound
