Spicy Texas Casserole
1 pound ground beef
3 large onions
1 large green or red pepper -- chopped
1 16-oz. can chopped tomatoes
4 oz. tomato sauce
1/2 cup rice -- uncooked
2 teaspoons chili powder
2 teaspoons salt
1/4 teaspoon pepper
1 clove garlic
1 cup cheddar cheese -- shredded
Preheat oven to 350°.
Brown ground beef, stirring to crumble.
Add onion and green pepper and saute until soft.
Drain fat.
Return to pan and stir in rest of ingredients except cheese.
Pour into 9x13 baking dish.
Cover with foil and bake for 45 minutes.
Top with cheese and bake, uncovered, for another 15 minutes.
