CHOCOLATE PEANUT BUTTER ICE CREAM CAKE Makes 12 servings.
Ice cream over a cereal chocolate peanut butter crust.
4 cups rice cereal, like Rice Krispies
3 pints chocolate chip or other ice cream
3/4 cup creamy peanut butter
6 oz semisweet chocolate, chopped
Place cereal in a bowl. In a saucepan, combine chocolate and peanut butter. Cook until chocolate melts and mixture is smooth, 2 min. Add chocolate peanut butter mixture to cereal and mix to coat.
-Spread cereal mixture onto bottom and 1 1/2" up sides of a 9" springform pan or other pan. Freeze until set, 10 min. Let ice cream soften at room temp until spreadable, 10 min. Spread ice cream onto chilled crust and freeze until firm, 4 hours, then SERVE
