MINI TACO STUFFED PEPPERS
MINI TACO STUFFED PEPPERS
1 lb. assorted mini pepper sliced in 1/2 lengthwise with veins and seeds removed
1 1/2 lbs ground beef
1 small onion finely chopped
1 1/2 cups cooked white rice
3 tablespoons taco seasoning
1 can salsa style tomatoes
2 cups shredded cheddar
1 cup shredded Monterey Jack
Fresh chopped cilantro
Finely diced avocado
Sour cream
Preheat oven to 350 degrees
Over medium heat brown ground beef. Add onions in the last 3-4 minutes of cooking. Drain any grease. Add taco seasoning, cooked white rice and salsa style tomatoes. Simmer for 5-7 minutes.
Lay peppers in large casserole dish. Spoon beef/rice mixture into peppers. Bake for 20 minutes.
Remove from oven and layer with cheese mixture. Bake until cheese is melted. Remove from oven and sprinkle with avocados and cilantro. Drizzle with sour cream.
