Coconut-Pecan Sauce
Coconut-Pecan Sauce. (This is a sauce not a frosting. To pour over cake or maybe even ice cream.)
4 tablespoons butter unsalted
1 cup coconut flakes sweetened
1 cup sugar
1 teaspoon vanilla extract
1 cup evaporated milk
1 cup chopped pecans
In a small saucepan, combine all ingredients, stirring until well combined.
Bring mixture to a boil for one minute, then remove saucepan from heat.
Allow to cool for five minutes, and then spoon over warm cake. If desired, poke holes in the cake first.
This is a sauce to pour over cake. It's not a frosting.
Yields: 2 cups
