Cowboy Cake
Cake:
2 cups flour
2 cups sugar
2 eggs
1 teaspoon vanilla
1 medium can crushed pineapple, undrained
1 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 350. Blend all ingredients and pour into prepared 13x9 pan and bake for 40 minutes.
Topping:
1 stick butter
1 cup white sugar
1 can evaporated milk (not sweetened condensed)
Combine in medium saucepan, bring to a boil and cook for 3 or 4 minutes.
Remove from heat and stir in:
1 cup coconut
1 cup pecans, chopped
Pour mixture over hot cake. After cooled, keep cake refrigerated
