Texas Mayo
Here in Texas, folks like a little zip to the food their making from time to time (okay - most of the time). This flavor-filled cover that need perfectly. Spread it on sandwiches, or burgers or use it in place of regular mayo in your potato and macaroni salads. You can adjust the heat to your liking too!
1 egg
1/2 tsp dry mustard
3 tbsp lemon juice (or vinegar)
1/2 tsp salt
1/2 tsp red pepper (approx - add more or less according to your personal taste
1/2 cup corn oil
1/2 cup olive oil
Optional: fresh chopped herbs: Parsley, basil or oregano
Whip egg, dry mustard, lemon juice, seasoning (and herbs if desired) in a blender or food processor for 1 minute. While machine is still running (on low) add in oils slowly and gradually until the mixture is thick.
Taste and add more seasoning taste and/or lemon juice to thin a little if desired.
Store in a container in the fridge.
