Caramel Apple Upside Down Cake
2 apples, peeled, cored and sliced into 1/2 inch thick pieces
1/4 cup butter
2/3 cup brown sugar, packed
1/2 tsp cinnamon
1 1/3 cup flour
1 tsp baking soda
1/2 tsp cinnamon
dash of salt
1/2 cup butter
1 cup sugar
1 tsp vanilla
2 eggs
1/2 cup milk
Melt 1/4 cup butter in sauce pan. Add brown sugar. Stir to mix well and heat to boiling. Remove from heat. Add in cinnamon.
Pour caramel mixture into the bottom of a prepared (sprayed with cooking spray) 8x8 baking pan.
Arrange apple slices on top of caramel, being sure to cover the entire layer.
Mix dry ingredients together and set aside.
Beat together white sugar and 1/2 cup butter until creamy. Add in vanilla, and then one egg at a time until the mixture is fluffy.
Add in dry ingredients, alternating with milk. Beat until well incorporated.
Pour batter over the apple layer.
Bake at 325 for 55-65 minutes until the cake is set.
When slightly cooled, run a knife around the edges and then invert onto a platter.
