Creamed Corn and Potato Skillet
3- 4 cups cubed potatoes, uncooked
2 tbsp butter
1-2 cloves garlic minced
2-3 green onions, chopped
1/2 tsp paprika
1/4 tsp pepper
1/4 tsp salt
4 cups corn, frozen, fresh or canned (drained)
1 cup heavy cream
Melt butter in a large skillet. Add minced garlic, and saute lightly. Add in chopped potatoes and cook about 10 minutes until potatoes are slightly browned.
Add in chopped green onions, spices and corn. Continue to cook, stirring occasionally, for another 5-8 minutes.
Add in the cream and allow to simmer just below boiling for 3-5 minutes.
