SOUTHWESTERN MEATBALLS Makes 16 meatballs.
Turkey, chile, onion, garlic, breadcrumb, cumin meatballs with a cheese center and a tomatoey sauce.
1 pound ground turkey
2 serrano chiles, seeded and finely chopped
1 onion, grated
2 cloves garlic, grated
1/3 cup breadcrumbs
1 tsp ground cumin
Salt and Pepper
4 oz Monterey Jack cheese, cubed
2 tsp olive oil
28 oz can diced tomatoes
Mix together turkey, serranos, onion, garlic, breadcrumbs, cumin, 1 tsp salt and 1/2 tsp pepper. Form 16 meatballs around cheese cubes. In skillet, heat oil. Add meatballs and cook until browned on all sides, add tomatoes and simmer until cooked through, 10 min. then SERVE
