Fiesta Fried Chicken

Fiesta Fried Chicken 4 - 4 oz extra-lean skinless, boneless chicken breast 5 cups Baked Lays Tortilla Chips - crushed 3/4 cup light mayonnaise 1 tbsp garlic powder 1 tsp cumin 1 tbsp chili powder 3 tsp lime juice Preheat oven to 350 Line a baking dish with foil and spray with nonstick spray In a Ziploc bag crush the tortilla chips with a rolling pin (or another desired kitchen weapon) and place in a shallow dish In another shallow dish combine mayo, garlic powder, cumin, chili powder & lime juice. Take each chicken breast and dip in mayo mixture and then into tortilla chips covering the chicken on both sides and placing into baking dish Bake for 25-30 minutes until chicken juices run clear. Let rest for 5 minutes and then remove from pan & serve. You can top the chicken with the Avocado Ranch Avacado Ranch 2 avacados 1 cup Mayonnaise 1/2 cup low-fat buttermilk 1 cup low-fat sour cream 1 tbsp garlic powder 1 tbsp onion powder 1 tbsp dried parsley 1 tbsp dried basil 1/2 cup fresh cilantro (you can substitute with fresh parsley if desired) 1/2 tsp chipotle pepper juice 2 tsp lime juice Place all ingredients in a food processor and let it go until sauce is smooth Pour into airtight container and store in the refrigerator for up to 1 week
