Instant Pot Ribs

Instant Pot Ribs 6 quart Instant Pot 1 rack baby back ribs approximately 2 pounds 1 Tablespoon olive oil 1 cup chicken broth or beef broth ½ teaspoon liquid smoke 4 cloves garlic sliced 1 onion sliced Dry Rub 2-3 Tablespoons paprika 3 Tablespoons brown sugar 2 teaspoons garlic powder 2 teaspoons onion powder 2 teaspoons lemon pepper 2 teaspoons dry mustard 2 teaspoons oregano dried 1 teaspoon freshly ground black pepper In a small bowl, mix together Dry Rub ingredients and set aside. Rinse the ribs to remove any bone fragments, pat dry with a paper towel, and use the paper towel to pull off the thin membrane connecting the rib bones. Cut rib rack into 2-3 rib pieces. Coat with olive oil, then Dry Rub mixture. Place metal trivet (or rack) into Instant Pot and add broth and liquid smoke. Set rib pieces on top of rack in an upright position. Toss in onion and garlic. Seal the lid and select manual pressure. Set the timer for 23 minutes (25 minutes if they’re frozen or over 2 pounds). Allow Instant Pot to natural release for 5 minutes, then manually release. Brush with barbecue sauce* (I LOVE Carolina Gold) and broil for 2-3 minutes, or grill on the BBQ until slightly charred, about 3-5 minutes. Notes *If you prefer dry ribs, brush with olive oil and sprinkle with salt and pepper and grill or broil as directed. Nutrition Information
