Banana Pecan Cupcakes
Cupcakes
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
16 tablespoons (2 sticks) unsalted butter, room temperature
1 cup Granulated Sugar
1 cup Light Brown Sugar
1 tablespoon vanilla extract
4 eggs
3 mashed ripe bananas
1 cup pecans, chopped
Frosting
16 tablespoons (2 sticks) unsalted butter, room temperature
16 ounces cream cheese, softened
6 cups Confectioners Powdered Sugar
2 teaspoons vanilla extract
Topping
24 banana chips
24 pecan halves
Preheat oven to 325°F.1
Sift together flour, baking soda, and salt. Set aside.2
Mix together butter and both sugars until well combined; mix in vanilla.3
Mix in eggs and mashed bananas.4
Slowly mix in flour mixture.5
Mix in chopped pecans.6
Divide batter evenly into cupcake liners and bake for 15-20 minutes, or until an inserted toothpick comes out clean.7
For frosting, cream together butter and cream cheese.8
Carefully mix in powdered sugar. Add in the vanilla and mix well.9
Spoon frosting into a piping bag fitted with 1M piping tip. Pipe frosting onto cupcakes.10
Top each cupcake with a banana chip and pecan half.
