1970's LUNCH LADY CAKE
1 C butter, melted
½ C cocoa powder (unsweetened)
½ tsp salt
½ tsp baking soda
2 C flour
2 C sugar
4 large eggs
¼ C cold coffee
1 Tbsp vanilla
Icing:
¼ C softened butter
2 Tbsp milk
2 Tbsp cold coffee
¼ C cocoa powder (unsweetened)
3 C powdered sugar
Preheat the oven to 350°F. Spray a 9×13 inch baking dish and line with a parchment paper or foil.
In a large bowl cream together your butter and sugar. Add eggs, coffee and vanilla; mix well until smooth. Add your dry ingredients and stir until just combined. Do not over mix. Batter will be very thick.
Pour the batter into prepared pan, smooth it out as best as you can (It is thick) and bake for 20-25 minutes until a toothpick inserted into the center comes out clean.
Err on the side of under baking if you are questioning. Once you remove the cake from the oven, make your icing by mixing all ingredients together until smooth. Pour the icing over top of the still very warm cake. Cool completely, cut and serve.
