Oxtail stew w/ smothered cabbage & cornbread
Oxtail stew w/ smothered cabbage & cornbread
4 lbs oxtails
1 bell pepper chopped
1 large onion chopped
1 stalk celery diced
3 cloves garlic chopped
3 tablespoons flour
4 cups beef broth
1/2 teaspoon cayenne 1/2 teaspoon pepper
1 teaspoon onion powder
2 carrots chopped
Season oxtail and brown well in 1 tablespoon oil Turning to brown well on all sides. Add flour and Vegetables and continue browning
Add broth and cover simmer for 4 1//2 hours
At the 3 hour mark add 2 chopped carrots
Cabbage....
Saute 1 head cabbage with smoked sausage onions and green pepper. Season with cayenne and black pepper
Cook for 45 min until tender
As for cornbread use your favorite recipe
