Easy Shrimp and Asparagus Bake
1 tablespoon ghee
1 tbsp coconut oil
3 garlic cloves
14 asparagus spears
20 large shrimp, shell removed & tail
on
Pre-heat oven to 375 F
Smear ghee, coconut oil and minced
garlic into a paste. Microwave until
melted.
Lay asparagus spears on a foil-lined
rimmed pan and brush the spears
with the melted ghee/garlic/oil
mixture. Place pan on the middle
rack of the pre-heated oven and bake
for 5 minutes. Remove from oven.
Add prepared shrimp to the pan and
drizzle the remainder of the ghee/
garlic/oil mixture. Return the pan to
the oven and continue roasting for 5
more minutes or until the shrimp is
done.
Serves 2
