Hush Puppies

Hush Puppies (approx. 2 dozen) 1 C. self rising flour 2 C. cornmeal 1 T. baking powder 1 tsp. salt 1 tsp. pepper 2 T. grated onion 2 large eggs 1 T. catsup 1, 5 oz. can evaporated milk water vegetable oil for frying In a bowl combine the flour, cornmeal, baking powder, salt and pepper. Beat together the eggs and the catsup, stir in the onion and add to the dry mixture. Add the canned milk and enough water to make a stiff batter. Allow the batter to sit while heating 1" of oil in an iron skillet to 350 degrees. Use a teaspoon and drop the batter into the hot oil. Fry in batches until golden brown on all sides. NOTE: The leftovers freeze very well, just thaw and wrap in foil and place in the oven to heat through.
