Grilled Lime Chicken
Grilled Lime Chicken
1/4 C. lime juice
1 clove garlic, minced
1 tsp. dried rosemary
1/2 tsp. chipotle chili powder (you can also use reg. chili powder)
1/2 tsp. pepper
1/2 tsp. Adobo seasoning
4 boneless chicken breasts
Whisk together the first 6 ingredients. Place the chicken in a ziploc bag and then pour the marinade over the chicken. Place in the fridge for at least 4 hours, longer is even better. Remove from the fridge 15 minutes before grilling to knock the chill off. Heat the grill to med. high and grill the chicken for 6-7 minutes per side. If unsure, use a meat thermometer to check the internal temp. as it should be 160 degrees. Allow the chicken to rest 5 minutes before serving.
