Meatloaf Stuffed Peppers
Meatloaf
6 Bell Peppers Amount will vary depending on the size
2 Eggs Beaten
2 Cups Quick Cooking Oats if GF use Certified GF Oats
1/2 Cup Evaporated Milk
1/2 Cup Chopped Onion
1 Tsp Salt
1/2 Tsp Pepper
1/2 Tsp Garlic Powder
2 lbs Lean Ground Beef
Sauce:
2 Cups Ketchup
1 1/2 Cups Packed Brown Sugar
1/2 Cup Chopped Onion
1 Tsp Liquid Smoke
1/2 Tsp Garlic Powder
Preheat the oven to 400*.
In a large bowl combine the meatloaf ingredients.
Cut the tops off the bell peppers and clean them out, then place the meat mixture inside each one to just over the top of the pepper and is full.
Spray a 9x13 baking dish, place the peppers in the dish.
Bake for 30 minutes at 400*.
Carefully remove the dish from the oven.
In a small saucepan, bring all sauce ingredients to a boil.
Pour over each meatloaf.
Return to the oven for an additional 30 minutes or until cooked all the way through.
