Pan-fried Bannock Bread
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon bacon grease, melted
3/4 cup water
vegetable oil for frying
In a large bowl whisk together flour, salt and baking powder.
Add bacon grease and whisk together with a fork, gradually add water and stir until dough holds together. It will be soft and sticky, similar to drop biscuit dough.
Divide into 6 to 8 pieces, dropping the pieces into a plate with flour in it, and turning them over to coat both sides. Using floured hands flatten each piece to an even thickness between your palms, and set aside on a clean plate. Repeat until all your bannocks are ready.
On medium heat, heat enough oil to cover the bottom of a medium frying pan, until a little flour dropped into the oil sizzles and foams. Add bannock to the hot oil*, and fry until golden brown on both sides (and cooked on the inside).
Drain on paper towel lined plate and eat warm or at room temperature.
*Do not cook on too high a heat or they will only cook on the outside.
