Zucchini Dressing
Zucchini Dressing
2 large zucchini
1 med. onion, chopped
1/2 C. unsalted butter
1 10.5 oz. can cream of chicken soup
3 eggs, beaten
1/2 tsp. poultry seasoning
pinch of salt
1/4 tsp. black pepper
3 C. crumbled cornbread
Wash and slice the zucchini and place in a 2.5 qt. pot and cover with water. Bring to a boil and add in the onion, cook for 6-7 minutes till tender. Drain the zucchini/onion very well and place back in the pot and back on the stove eye it cooked on and use a spoon to mash up the zucchini. Add the butter and stir around till melted. Remove from the stove and add in the remaining ingredients. Stir well to combine. Pour into a buttered 8x8 baking dish and place in a 350 degree oven for 45 minutes.
