Banana-Nut Spice Cake
6 very ripe bananas
1/2 cup vegetable oil
3 cups flour
2 teaspoons soda
2 1/2 teaspoon ground cinnamon
1 1/2 teaspoon ground cloves
1/2 teaspoon salt
1 stick butter
2 cups sugar
4 eggs
1 1/2 cups seedless raisins
1 1/2 cup chopped pecans
Coat 2 loaf pans with non-stick spray; set aside. Preheat oven to 250°. In a medium bowl, mashed banana; pour vegetable oil over top, set aside. In a large bowl, combine flour, soda, cinnamon, cloves and salt; set aside. Cream butter and sugar; add eggs, one at a time, beating well after each addition. Stir in banana mixture; mix well. Slowly mix in dry mixture; mix until well combined. Blend raisins and pecans; mix thoroughly. Pour into prepared pan; bake for 1 1/2 hours.
