Nana's Butterscotch Pudding
Nana's Butterscotch Pudding (approx. 4 servings) 1 C. packed brown sugar 6 T. cornstarch 1/2 tsp. salt 2 large eggs, beaten 2 C. whole milk 2 T. butter 1 tsp. vanilla extract In a med. size pot, whisk together the first 3 ingredients. Turn the heat on to medium and whisk in the beaten eggs and milk. Continue whisking until the mixture thickens to the point it will coat a spoon and not slide off. Once it has thickened, remove from the heat and whisk or stir in the butter and vanilla. Pour into serving bowls and allow to cool slightly before serving.
