Lemon Pepper Rotisserie Chicken Salad
1 lemon pepper rotisserie chicken
2/3 cup chopped pecans
1/2 cup chopped green onion
1 1/2 tsp lemon pepper seasoning
Zest from 1/2 large lemon
1/3 cup mayo
3 Tbsp sour cream
Salt to taste beware that lemon pepper seasoning contains salt, so make sure to taste chicken salad first, before adding more salt.
Break down the rotisserie chicken and take off all meat. Discard all the bones and fat. You can choose to keep the skin, mince it and add it to the salad. (I like to sear the skin until the fat is all rendered and skin is crispy.)
Dice chicken meat and add it to the mixing bowl.
Add chopped green onion, pecans, lemon pepper seasoning, and lemon zest. Mix well.
Add mayo and sour cream, mix well until all ingredients are evenly incorporated.
Keep refrigerated, in an air-tight container.
