STRAWBERRY JELLO CREAM CHEESE PIE
STRAWBERRY JELLO CREAM CHEESE PIE
2 pints fresh strawberries, cleaned and hulled
3 ounce box Strawberry Jello
1 cup boiling water
8 ounces cream cheese, softened
2 tablespoons sugar
8 ounces cool whip, thawed
9 inch deep dish pie crust, baked pastry crust or graham cracker crust
Place 1 pint cleaned strawberries into a blender and puree until smooth.
In a medium bow, combine boiling water and strawberry Jello mix. Whisk together until Jello powder is dissolved. Stir in pureed strawberries.
Chill in the fridge for 1-2 hours until thickened BUT NOT set.
After Jello mixture has thickened, combine cream cheese and sugar in the bowl of an electric mixer. Mix on high until smooth.
Fold in 2 cups cool whip and stir until combined.
Spread cream cheese mixture into bottom of pie crust.
Pour Jello mixture over cream cheese.
You probably WON'T be able to fit all of the Jello mixture in the pie dish. I don't know what kind of magic pie shells they had back in my grandma's days but I couldn't get all of the strawberry mix to pour on top without making a huge mess. HOWEVER, save the left over strawberry jello mixture in the fridge because once the pie and mixture has chilled overnight you can scoop the extra onto the pie top before serving!
Place into fridge for 6-8 hours.
slice remaining strawberries and arrange them on top.
Serve with remaining cool whip.
NOTES
PLEASE NOTE - this strawberry layer is more like a thick strawberry sauce layer and not like a jiggly jello layer.
