Peanut Butter Bread
Peanut Butter Bread (no flour)
3 large eggs
1 C. creamy peanut butter
1 T. white vinegar
1/2 tsp. baking soda
1 T. sugar (for #KETO substitute stevia)
walnuts, optional
In a mixing bowl, whisk the eggs lightly. Add the peanut butter, vinegar, baking soda and sugar. Whisk well until nice and creamy, it will appear like a smooth batter. Pour into a lightly greased
3.75" x 8" loaf pan or two mini loaf pans. Top the batter with a few walnuts, if using, and bake in a 350 degree oven for 35 minutes. Allow to cool slightly in the pan, remove and allow to continue to cool before slicing.
