Lemon Snow Cookies

Lemon Snow Cookies 1 1/4 cups flour 1 tsp baking powder 1/2 cup butter 1/4 cup sugar 1 tsp vanilla extract 1 large egg finely minced zest of 1/2 lemon more if you like Sift together the flour and baking powder and set aside. Cream together the butter and sugar well. Beat in the vanilla extract and egg. Stir in the finely minced lemon zest. Fold in the flour mixture until a soft dough forms. Do not overwork the dough. Wrap the dough in plastic wrap and chill in the fridge for about a 1/2 hour. Roll dough into about 1 inch balls and place them 2 inches apart on a parchment lined cookie sheet. Press them down with two fingers. Bake at 325 degrees F for 12 minutes or until they just start to turn golden brown at the bottom edges. While still hot dust with powdered sugar. Transfer to a wire rack to cool completely.
