Cheesy Cow Casserole
1 lb lean ground beef
1 cup chopped celery
1 onion (chopped)
1 bell pepper (diced, red, yellow, or green)
1 cup long grain rice
1 cup broccoli
1 1/4 cups water
2 Large Tomatoes (Diced)
4 1/2 ozs New Mexico green chile (roasted, peeled, and chopped)
2 tbsp hot red chile powder
1 1/2 cups shredded monterey jack cheese
In large ovenproof pan, cook the ground beef, celery, onion and bell pepper until beef is cooked and vegetables are tender; drain fat. To pan, add rice, water, diced tomatoes, chopped green chile and chile powder; heat till boiling and remove from heat. Add broccoli, mix, then add to baking pan, sprinkle cheese over top, cover and a bake at 350 for 45 minutes. Then uncover and put back in oven for 15 minutes. Remove from oven and let stand for about 10 minutes. Serve.
