Mexican Ground Beef Casserole
8 oz. Elbow Macaroni
1 lb. Ground beef
1 pkg. Taco Seasoning
1/4 C. water
1 small onion, chopped
1 10oz. can diced tomatoes with green chili's
8 oz. shredded Colby jack cheese
1 C. frozen whole kernel corn
chili powder
Bring a large pot of water to a boil, add a Tbsp. of salt and the pasta and cook until done, drain and set aside. In a medium size skillet, brown the ground beef, drain and toss in the onion and corn and cook until onion is tender, about 6 minutes. Add the taco seasoning and 1/3 C. water stir well. Add the canned tomatoes to combine. Pour the meat mixture into the cooked pasta and stir in 1/2 of the cheese. Pour into a greased casserole dish and top with remaining cheese. Sprinkle the cheese with a little chili powder. Bake at 350 degrees until bubbly.
