Elotes
4 ears corn on the cob
1/2 cup mayo
1/3 cup sour cream
Juice of a lime
Chili powder
Cumin
1/3 cup Cotija cheese
2 tablespoons grated parmesan cheese
Dash of sea salt
Pinch of fresh cracked pepper
Grill corn until lightly charred on all sides
In a bowl combine mayo, sour cream, chili powder, cumin, salt, pepper and lime juice
Toss cotija and parmesan cheese together
After corn is grilled, allow to cool, brush on the sauce and sprinkle with cotija cheese, garnish with dried parsley and chili powder
