Mama's Meatloaf
Mama's Meatloaf
1 lb. ground beef
1/2 lb. ground pork
1 egg
1 pkg. onion soup mix
1/4 c. warm water
10 saltine crackers, crushed
1/2 C. quick cooking oats
1 T. worcestershire sauce
1/4 C. ketchup
1 T. bbq sauce
1/4 C. finely chopped onion
1 tsp. pepper
1/2 tsp. salt
Topping: Combine 1/4 C. ketchup, 1 T. brown sugar and 1 tsp. mustard.
In a large bowl add in the beef and pork. In a small bowl mix together the onion soup mix and water, and pour over the meat. Add in all remaining ingredients, minus the topping, and using your hands mix all together very well. If it still feels a little loose add a few more oats or crackers. Place meatloaf mixture into a 9 x 13 casserole dish and form into a loaf. Bake at 350 degrees for 35 minutes. Remove and drain any grease that you can from the pan then brush topping over the meatloaf and return to the oven for an additional 10-15 minutes. Let rest for 5 minutes before serving.
