Southern Mustard Green
Southern Mustard Green
1 bushel Mustard Greens
1 ham bone or hock
1 cup broth
1/2 cup butter
1 tablespoons cayenne
1 teaspoon sugar
Wash greens very well to remove all dirt. Remove leaves from hard center stem, cut. In large pot, sauté ham in a little butter until brown. Add broth and butter; bring to boil. Slowly add greens, stirring. Allow to cook down slightly, add more. Stir in cayenne and sugar. Reduce heat to low. Cover, cook for 1 hour.
