Mushroom Meat Loaf
1 pound fresh mushrooms
1/4 cup butter
1 teaspoon lemon juice
1 medium onion, minced
4 cups breadcrumbs
1 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon thyme
1/4 cup parsley, minced
2 eggs, beaten well
3 pound ground chuck
1/4 cup milk
1/3 cup ketchup
1 1/2 teaspoon dry mustard
Cook mushrooms and onion, over medium heat, for 3 minutes in butter and lemon juice. Stir together 3/4 of the mushrooms, bread, salt, pepper, thyme and parsley. Combine eggs, meat, milk, ketchup and dry mustard; mix well with hands, divide mixed in half. Pack half in 9x5x3" loaf pan. Spread bread stuffing mixture evenly over meat; cover with remaining meat mixture. Bake 400° for 70 minutes. Top with remaining mushrooms and serve.
