Christmas Eve Pecans
1 egg white
4 cups pecan halves
1/2 cup sugar
1 1/2 tablespoon cinnamon
1/4 teaspoon salt
Beat egg whites until foamy. Add pecan halves; stir gently until coated. Set aside. Combine remaining ingredients; sprinkle over pecans and stir gently until coated. Spread pecans evenly on a lightly greased jellyroll pan. 300° for 30 minutes, stirring every 10 minutes. Cool completely; sprinkle with powdered sugar. Store in airtight container.
