Cajun Meatloaf
Cajun Meatloaf
2 tablespoon butter
1/3 cup onion, finely chopped
1/4 cup green pepper, diced
1 1/2 tablespoons cajun seasoning
1/2 tablespoon Worcestershire sauce
1 teaspoon garlic, minced
1 bay leaf
1/4 cup milk
1 pound ground beef
1 egg
3/4 cup rolled oats
Glaze:
1/3 cup ketchup
1/3 cup brown sugar
2 teaspoons Worcestershire sauce
Preheat oven to 350F. In skillet, over medium heat, melt butter. Add onion and pepper; sauté until tender. Add all seasonings; cook for about 5 minutes. Stir in milk; cook for about 2 minutes. Discard bay leaf. Let cool slightly.
In a large mixing bowl, mix cooked sauce mixture, ground beef, egg and oats; stir to combine. Form into a loaf; place in greased baking dish. Bake for 1 hour.
In a small bowl combine ketchup, brown sugar and Worcestershire sauce to form a glaze topping. Spread on top of baked meatloaf. Place under broiler for about 5 minutes, until bubbly.
Note: I line my pan with foil for easier clean up. Also if you use "non-stick" foil, you don't have to spray it.
