Black-eye Peas and Ham
2 lbs dry black-eye peas
1 lb Honey Smoked Ham
¼ cup Garlic and Onion Powder
½ cup Tony’s Cajun seasoning
2 dashes Red Pepper
In a large stock pot, place black-peas and enough water to cover the peas by 2”. Cut ham into bite size pieces. Add ham and seasoning. Cook on high until peas come to a rolling boil. Reduce heat to medium and cook for about 2 hours or until peas are soft. Stir occasionally to prevent sticking. Serve over corn bread.
