Potato Chip Pecan Sandies
3/4 cup butter -- (1 1/2 sticks)
1 tablespoon vanilla extract
3/4 cup sugar (divided)
1 1/4 cups flour
1/4 teaspoon salt
1/2 cup chopped pecans
3/4 cup crushed potato chips
1 cup chocolate chips -- melted for dipping
Preheat oven to 350 degrees.
In bowl, beat butter, vanilla and ½ cup sugar until light and fluffy. Add flour and salt and mix. Mix in pecans
and potato chips. Combine well. Roll level tablespoons of dough into balls. Roll balls in remaining ¼ cup sugar.
Place cookies on parchment-lined baking sheets. With a flat-bottomed glass, press each cookie to flatten.
Bake in preheated oven 16 to 18 minutes. Cool on wire rack. When cool, dip one-quarter of each cookie into
chocolate.
